Coconut Crepes

I am adding the recipe with a twist…I ran out of basic white flour and substituted organic coconut flour.  It added a neat texture and was quite good without any overwhelming coconut flavor.  Give it a go.  First, here is the link to my original crepe post…

You shall find the basic crêpe recipe from Julia Childs’ Mastering the Art of French Cooking, Knopf, Borzoi Books, 2010; page 191.  I have doubled this and added the coconut flour.

2 cups cold water
2 cups cold milk
8 eggs
1/2 tsp salt
1 1/2 cups flour (scooped and leveled)

1 1/2 cups organic coconut flour
8 Tb melted butter
( I add a dash of vanilla extract, grated nutmeg, and cinnamon to the mix)

For sweet cinnamon crêpes, I add a mixture of white granulated sugar and cinnamon mixed to the inner aspect before rolling then decorate the outer with a pinch.
